Story Posted: March 16, 2010 Canola Gold Cookie developed for 2010 Winter Games! The Canola Gold Cookie was developed in conjunction with the Food Centre in Saskatoon and was distributed by SaskCanola to visitors at the Saskatchewan Pavilion during the 2010 Winter Games in Vancouver. The recipe, which showcases canola oil and other Saskatchewan ingredients, makes 5 dozen cookies. Enjoy!
Ingredients:
Instructions: 1. Line baking sheets with parchment paper; set aside. 2. In large bowl, beat oil with sugar until fluffy; beat in eggs and vanilla. 3. In a separate bowl, whisk together rolled oats, flour, and baking soda - stir into egg mixture until combined. 4. Stir in chocolate chips, dried fruits and coconut. Let dough sit at room temperature for 10 minutes. 5. Use a tablespoon to place the cookie dough on the baking sheets, place about 2 inches (5 cm) apart, and lightly press dough to flatten. 6. Bake in 350°F oven until golden, about 13 minutes. 7. Transfer to rack; let cool.
